let's get back to soup.any good recipes?

Roast two aubergines and maybe 3 or 4 red peppers. And some garlic.
Take skin off the peppers and cut into cubes
Sweat some onions and more garlic and half a teaspoon of cumin seeds.
Add your roasted veg.
Fry, but do not brown.
Throw in stock. Let the flavours blend.
Stick into your food processor and give it a few blasts to get any lumps out.

It's the balls.

You could add some cream which gives it a lovely smooth texture.

Some soup purists don't dig this though, 'specially the vegans!

Using a decent quality (preferably homemade - surprisingly easy) well make the world of difference. After that, the best advice I can give you is go for something simple (unless you want something that sounds impressive rather than tastes delicious). Tinned tomatoes are fine, but try and get good quality ones. Fresh tomatoes should be getting good this time of year. I made a roast tomato soup a year or two ago. It was lovely. I'll see if I can dig out the recipe.

Sounds delicious cpr. Congratulations. Once you've made one soup, you can make loads. A hand blender is a worthwhile investment, if you don't have one already.
 
I love bean soups.

Butter Beans cooked in light stock with lots of garlic and onion and a couple of bay leaves beans. Then blended and seasoned with smoked paprika and tarragon then sieved.

Or Berlotti or Haricot beans lots of garlic beans with sausage. This time left nice and thick.

Which I am very impressed with. I know the man is a pain in the arse but his recipes are always great, simple and unfussy yet technically precise.
