How to make nice pancakes:

8 oz. flour (about 10 very heaped desertspoonsfull)
4 eggs
Nearly a pint of milk, topped up to make a full pint with some water

Whisk it all up
(if you've an electric whisk, beat the eggs and flour together first until they're creamy, then add the milk, but it's not really that important ... this recipe still works even if you've no whisk - just put all the ingredients in a jar and shake the fuck out of em)

Put some butter in a pan, heat the pan until it's really hot, then turn down the heat and let it cool off a little bit. Pour in some batter, move the pan around until the batter covers the bottom of the pan. Wait until all the batter is set, then flip it, leave it for another few minutes and it's done

If you like you can put more eggs in the recipe (I've successfully gone up to 6 ) - more eggs makes it less stodgy
