I'm going to make one tonight, since I bought a thing of curry paste last week. I can't afford meat. What veg shouild I put in? Thanks

Every curry needs mushrooms and tofu. You can get giant bricks of tofu in oriental food specialists for cheap, then keep in freezer to use whenever. Tofu is great in thai green curries and, I imagine, a good replacement for meat.

Well, if it's been frozen it marinates in seconds, soaks that shit up like the sponge it has become.
And I find if you cut thinish strips (of the fresh/unfrozen stuff) it only takes 15mins or so to marinate.

I've got some frozen prawns. I'm thinking of putting them into a green curry tomorrow. Ernesto drunkenly agreed to come around for dinner last night. I hope he comes.

favourite thing to put in thai curry: chunks of aubergine, brushed with a bit of oil and then cooked on a grill pan until they've got those nice charred stripes on them. also try with peppers and mushrooms. just add to the curry while it's cooking. yum.

also! thai basil is fabulous shredded over your finished creation (hem hem).

also! if you have time, patience, and a food processor, you can make your own thai green curry paste, and it is delicious.
