anyone ever fry up these badboys? they always look over ripe in the african shops that i've seen. any recommends on where to get some fresh ones?
 
and? are they tasty or wha? look well nice. seems a lot of recipes add garlic to 'em... sounds like an odd combo, but thats cause i imagine them to be like harder bananas, which they're probably not. enlighten me mr egg!
 
plantains are used in 3 different stages:
1:completely green all over.contains all starch and you can use em like a potato,mashed,boiled,roasted,whatever.
2:turning yellow with some black patches.more sugary.usually fried up and served up still as a savory thingy(with a curry or something)
3:completely ripe.looks rottingly black on skin.more mushy.most sugary stage.Used in deserts mostly.

so if you see one in the shops completely black,its still good.they aint like bananas.oh yeh and if you eat one raw you'll die of toxins...good luck then
