hey, when you kill a zombie/crush their heads don't they not die? What's the point in fighting them, like?

Also, who's running King's Landing, now that all Lannisters/some Tyrells are in jail/away/dead/balls not dropped. Like those crazy monks are hardly doing stuff like fixing pot holes and paying the cart drivers and that. Who's telling the army what to do?

I think they do. Only they're replaced by the recently deceased. Otherwise it's still worth crushing them before they slaughter you.

Kevan Lannister. I think Qyburn referred to him as the new Hand of the King whereas in the books he simply replaces Cersei as Regent.

My understanding is that they 'die' but then the whitewalkers do a look about, raise their arms and abracadabra!, they're back on their feet again.
 
Wights are also nigh-indestructible and can withstand an injury that would normally be fatal, including stab wounds and the removal of limbs; even amputated limbs will still move around on their own. Decapitation is ineffective, as the headless corpse will keep moving, albeit robbed of its sensory organs.

However, wights are very susceptible to fire. Their flesh is extremely flammable, as if it were coated in oil: it will easily catch fire and continue to burn if exposed to even a small amount of flame. As a precaution against them, the Free Folk burn their dead so they cannot be revived as wights.
