Everyone I know overcooks rice. For basmati anyway (im sure long grain similar, just not used it in ages) 1 cup per person/half a mug. That's quite a generous portion. Boil kettle, pour over rice in pot, any amount. Really doesn't take long, bout 5-7 mins simmering. But TASTE TEST. As soon as it is softening, you need to be ON IT. You want it JUST when it tastes slightly underdone. Take it off. By the time u strain it in seive, pour some boiled kettle water over it it will be fluffy as you'll ever need. Boom
