Nicest potatoes I've ever eaten have been cooked in the embers of bonfires. You wouldn't eat the skins mind - but the rest of them is just yummy!

put potato into microwave for 3-4 mins depending on size
then do the slicey thing on the top
throw into oven at 180 for 10 mins to crisp up skin.

voila. instantish baked potatoes.

this is a good point. skin MUST be pierced to let out heat. An ex housemate of mine decided to treat himself to microwaved baked potatoes one night but ended up setting them on fire in the microwave. When we threw them out into the rain to douse the flames, the potatoes broke open to reveal themselves glowing with the fire of a thousands suns. Well, maybe not that glowy, but still pretty hot!!

anyways, mushy peas are a favourite topping of mine.

you can just skip the oven bit. pierce em and lash em in the microwave for 8 to 10 mins (turn them over half way thru) and theyre grand. bit of butter and away with you.

what about potato cakes? i love them, for breakfast - with butter on them, and beans, sausages, rashers, brown bread, coffee.

I'm going to try the whole 'oven cooked' baked potato this afternoon. I too thought there was tin foil involved but apparently not. Will let yis know how it goes. Mmmm, filled with cheese, tuna and mayonnaise.

microwave first definately. -also driblle a thick line of salt around the spuds on the cooking tray before you put them in the oven. the salt draws out the moisture from the potato skin making them super ccccrispy
