Not sure you've fully grasped the "...without being rude..." part of the question.

Go to account>edit friends>make new list then add either people you want to talk to or people you don't to the list. I did one for people I that I want to talk to.
Then list then appears in your chat box and you can choose which list you're online for. You can have multiple lists and all.

Make a list of those you want to share with first. When you make a status update use the drop down box on the right (near update button) to choose that list only. Then update.

If you want to change the people each time, yeah then you'd have to do it over and over. If you have a list of close friends or family or thumped people...what have you already set then you just mark each update with the list that's allowed to see. Does that make sense?
