Blueberry muffins (2 Viewers)

Big fan of blueberry and lemon and poppyseed muffins. The mammy makes lovely ones.

Handy recipe too.

Also what butter do people use when baking? I used Stork last time and it wasn't bad but I'd prefer to use low fat marg/butter but I know the taste isn't the same.

I use real butter (unsalted where necessary) when I'm baking, food always tastes much better.
 
Butter can make shortcrust pastry a bit too flakey sometimes though. I usually chuck in a bit of marg to bind it. Other than than, butter tastes far better in baked stuff.
