Recommend me lovely salads, please!

To start things off here's a lovely, easy to make salad:
Grated carrot
Crushed up walnuts
Poppy seeds
A little oil and balsamic vinegar
 
Rocket, goats cheese, celery, pine nuts and pear. With olive oil and balsamic vinegar.

Spinach, marinated tofu and mango, same dressing.

Brown rice, brown lentils, cherry tomatoes and avocado with soy sauce.

My new favourite salad, which I'm sure I posted up somewhere recently before, consists of juilienned cucumber & spring onions on a bed of rocket, with lumps of plum tomato, topped off with tons of fried tofu.
The killer part is the dressing though. It's fuckin unreal:

2 parts sesame oil to one part mild soy sauce
A good teaspoon full of wasabi
Juice of one lime
Blend in a blender, or else really ferociously by hand

Pour over salad
Cry with happiness/too much wasabi up your nose.
 
It's all about the dressing I reckon But mostly mine go something along these lines:
Lettuce/rocket/baby spinach
Tomatos/grated carrot
Cucumber
Avocado
Loads of seeds (sunflower, pumpkin,sesame,hemp) toated with a bit o soya sauce splashed on during toasting

Dressing:
Balsamic vinegar
Olive oil
Garlic
Mustard
Tahini

this sounds gross but its tasty tasty tasty... was developed in student days by a flatmate so id say the novelty of having an actual dinner made it all the more palateable... still cant get enough of it though..

apples (2) peeled cored & cubed
iceberg/cos or other crispy leaves
celery
big handfull of rasins
cheddar cheese cubed (loads)
... drown in ceaser salad dressing... big chunk of bread..... yum!!!

i do add poppy/sesame/pumpkin seeds too sometimes...

my other fave is simply

rocket
walnuts
toasted pine nuts
cherry tomatoes
parmesan cheese shavings

just dressed in lemon juice olive oil salt and pepper
YUM!

Don't think one of my faves has been posted yet (most of them have).

red cabbage shredded
cherry tomatoes halved
baby spinach
pumpkin/sunflower seeds

and some kinda dressing involving olive oil, balsamic vinegar, loads of black pepper and a few chilli flakes if you're feeling adventurous.

imho dressings aren't my strong point

Artichoke hearts
Grated mozerella
Salami
Pepperoni
Oil and vinegar
Top with Parmesan, garlic croutons and fresh ground black pepper

Edit: A salads not a salad without meat.

The artichokes are the meat. Where'd you get them anyway? I've had them once and was impressed but I've never seen them in the shops.

I get them shipped from CA, along with pepperoncini, masa harina and mole.
You'll find masa in Ireland now, but if you can find mole, pepperoncini or canned artichoke hearts, let me know.
BTW, thanks Ian, for absolutely no help on the Monterey Jack front!
 
Or, steam up a few full artichokes....
Peel the leaves off, one by one, but only one at a time...
dip in melted butter or mayo...
scrape the leaf off your bottom teeth.
then, dice up the heart and throw it into your salad.
