Carrot Soup - An Ode (1 Viewer)

I googled a few recipes last night and came up with a bastardisation of a few of them and it was only gorgeous

Sweat 1 chopped onion and 2 chopped cloves of garlic
Grate around 10 medium sized peeled carrots into the pot with the onion and garlic - let them all cook together for a while
Add around 100ml orange juice along with a pint or so of water and 2 chicken stock cubes
Add curry powder to taste
Add paprika to taste
Salt and pepper to taste
Let simmer until carrots are cooked through - won't take long as they're grated
Once cooked use a handblender to wizz it all together. Add chopped fresh coriander and remove from the hob.
Add a glub of creme fraiche and serve.

Yummy. Might add a bit of fresh ginger next time though.
 
theres a nice recipe in the avoca cookbook too. roughly its this:

about 10 carrots chopped up
3 red peppers chopped up
one of them big onions chopped up
a lime
cinnamon
salt and pepper
water/stock

roast the carrots and peppers first to make them flavoursome, soften up the onion in oil or water, put the roast veg into the pot and add in the stock or water and salt and pepper and cinnamon (if you want, i rarely bother with the salt, stupid salt, very over rated) and bring it all to the boil, simmer it til the vegs are cooked then squeeze in the lime juice, whizz with the blender and eat with buttery brown bread. something like that anyway.

mmm. i sometimes stir some more finely grated carrot in after the blenderizing - gives it a bit more colour and texture.

also haven't tried it with orange juice before, i am intrigued!
