My dad says that when he meets with couples who come to get married by him, he notices stuff like this, too, and he's almost always right about it. His methods aren't scientific or anything, but he tells me he notices stuff like whether they look at each other, touch at all (not, like, in a sexy way), smile, talk warmly and openly, come in holding hands (because I dunno, I think I'd be all gooey and excited and freaked out and handholdey if I were about to go talk to someone about getting hitched), laugh together, etc. He doesn't keep score or anything, but for those couples he keeps in contact with, he's not normally surprised when he hears which ones don't stay together. He can't -- and wouldn't -- tell people not to get married or anything, but he said it's pretty easy to see coming.
