made this for the first time last night to have with roast dinner - why have i not done so before? it is like a giant puffy squishy pancake that you can squash into your gravy.

oh, and here's how you do it (serves 6):
* get your oven good and hot - i did it at 230 degrees.
* put 240g flour and a pinch of salt in a bowl.
* break in 3 eggs
* measure 400ml milk and 100ml water into a jug.
* gradually mix the liquid into the flour/eggs with a whisk until you get a thin batter.
* heat up a good slosh of oil in an ovenproof dish on the stovetop (purists use lard or dripping, i had neither so used peanut oil because it can get very very hot without burning, i presume you can use any veg oil).
* when the fat is hot, pour in the batter (sizzle!) then immediately put the dish in the oven.
* cook for 45 minutes or so. try not to open the oven while it's cooking, it lets the heat out.
* marvel at its puffy splendour.

roast dinner is the new going out, kids.
