let's have 'em

love pumpkin, like a giant cheap butternut squash, its all over the shop at the moment, and will be cheap as chips next week

so i'm after a decent soup recipe.

have a good curry one, will post later when i dig it out.

it's also real decent roasted, and put into a risotto, or if ya cut into big chuncks and roast serve with some spicy hot relish,

hot relish : cut tomatoes in half sprinkle with chopped green chillies and garlic, some olive oil and roast for about 45minutes, roughly chop = decent

that does look very tasty indeed, and wow what a website!!

but one question? what would be an irish equivalent of graham crackers?

I used crushed digestives, which worked quite well. It's a weekend project (with all the cooking, cooling, cooking and cooling) but totally worth the effort and it keeps quite well.
 
my mum made pumpkin soup once, it was nice. no idea how she made it. hope that helps!

Easy peasy lemon squeezy - mine is just pumpkin, onions, garlic, olive oil, tinned tomatoes, stock, a pulse of some sort (lentils are good but did chickpeas last week due to extremely cheap chickpea glut) and whatever other veggies are lurking in your fridge/ garden.
