Squiggle, how serious is the white cloth issue? generally when i need some cloth i turn to my underwear box and rip up one of the tattier boxer shorts but theyre all colouredy ones

i think i might try this then, although i might try to make less than 6 jars on my first attempt.

Did you try it Shaney? I made a batch yesterday evening - sooo good. Those quantities make 2 large jars so I guess about 4 or normal sized ones.
no, i got so sick of eating, talking and thinking about apples and chutney that i decided not to bother. are you using yours straight away?
Apple Chutney
Ingredients
1 Lb Onions grated or finely chopped
1/2 pint Vinegar
2 Lb peeled, cored and chopped apples
2-4 oz dried fruit (optional)
teaspoon pickling spice (tied in a muslin bag)
teaspoon salt (or less)
teaspoon ground ginger
12 oz sugar
Put onions in a saucepan with 1/8 pint of the vinegar and simmer until almost soft. Add the apples, dried fruit, pickling spice, salt, ground ginger and enough vinegar to prevent burning and simmer until the fruit is soft. Add the remainder of the vinegar and the sugar and stir well. Boil rapidly until thick, remove spice sachet and pour into hot jars.
Cool! It keeps for ages too, even open (as long as you properly sterilised and heated the jars). I just finished off a jar of last years stuff the other day - that had been open in the fridge for about 4 months, still perfect.
Gots to make this damn chutney! it's like a pickled cloud looming scrumptiously, over there.
