L'Orgue Mystique by Charles Tournemire is incredible. He composed a set of 51 church organ suites (according to some French convention about which masses in the year that the organ was played at) so there's something for all occasions in there, though the Christmas ones are my favorite. I recommend the complete recordings by Georges Delvallée and/or Sandro Muller.

... that's from memory, from when I used to sing in the church choir in Wexford between 4th class and 6th class. Apart from the spelling mistakes I somehow remembered it (and that's made me feel less old, result!)
