Actually most of those differences come from English Professors of English changing the spelling of words so that they sound more Latin, without any particular regard to whether the word actually comes from the Latin equivalent or not.
I don't know much about it, Terry Dolan's always roaring about it.

I always say, "May I have an order of chips, please?" I get a strange look back. Portion not order. I will never remember this, portion, portion portion.

Just say bag, it's less formal than portion or for proper authentic dub say "one chip (there bud)".

I thought it was to do with Americans expressing their difference and freedom from the United Kingdom by not speaking in the Queen's English and consciously making an American form of English.
