There's a finite (and determinable) number of possible responses i.e. the number you come up with after doing the sums.

Examine the chart closely and you'll see these numbers always have the same symbol (even though they are rotated each time you try the trick - just to put you off).
 
for every 10 you count up 20,30,40.... there's always going to be one number that it corresonds to. For example, for 20 it's

20: 2 + 0 = 2. 20 - 2 = 18
21: 2 + 1 = 3. 21 - 3 = 18
22: 2 + 2 = 4. 22 - 4 = 18
23: 2 + 3 = 5. 23 - 5 = 18
24: 2 + 4 = 6. 24 - 6 = 18
25: 2 + 5 = 7. 25 - 7 = 18
26: 2 + 6 = 8. 26 - 8 = 18
27: 2 + 7 = 9. 27 - 9 = 18

get my drift?

but theres a pattern there, if you do it a few times and write down your answers, then after a couple of attempts do it and you get your symbol...

that symbol represents every previous answer you've got so far

SO, there are obviously only certain numbers you will always get from the equation...

XY - (X+Y)

...these seem to be...

1, 9, 18, 27, 36, 45, 54, 63, 72 etc etc

though they're could be red herrings
I don't why he can predict the results of that equation though?

original number = a*10 + b

resulting number =

a * 10 - ( a + b )

= a * 9


every answer is going to be a multiple of nine.

of course, what the really magic bit is is that the sequence of symbols rotates every time you click on the ball, so that it looks as if you're getting a completely new symbol every time, when you're not, you're just getting a multiple of nine every time (and a multiple of nine less than 90 as well)
