Honestly? There are a few Italian places that do amazing ice cream. Botticelli in Temple Bar: Italian ice cream made with Irish dairy products? Doesn't get much better than that. There's the restaurant, but then there's also a separate gelateria next door to it.

I'm trying to remember now where I recently had some ice cream (it was a restaurant who did their own) that nearly made me weep with joy.

Handmade ice cream is becoming a slightly more common thing here, which is good because with the amazing dairy products, Ireland could easily be making the best ice cream on earth.

Ben & Jerry's Coffee Coffee Buzz Buzz Buzz is my favourite. However, I once had a homemade ginger ice cream with bits of molasseses cookies, which was pure heaven.
