Better than I expected
A keeper!
Soak a piece of tamarind about the size of a mini mars bar in about a cup of boiling water. Add a thumb sized amount of ginger, 3 star anise, a good lash of chili oil and a couple of tbs of soy.
Stick in the micro for a few mins and boil up. Then leave to cool
Put a good handful of beansprouts and matchsticks of seeded skinned cucumber in a bowl.
Strain the cool dressing, through a sieve, over this greenery. Add chopped corriander
Salt and stuff and the juice of half a lime.

When it's warm the dressing is quite thick. If you leave overnight the water comes out of the cucumber and he beansprouts wilt down slightly but keep their crunch.
