You'll probably find some if you search around a bit...

Roisin Dubh is a great venue....

Basically anyone touring Ireland usually does Whelans, Roisin Dubh and the Lobby (Cork) etc etc..
Big names have played there

Also check out Cuba... they also do a lot of gigs

It can be hard to get a gig in Rosin Dubh. The place gets stuffed with boozers for the regular local covers bands so why should they bother with you they'll say.

In fact Galway has always been bit of a hole for live music, although seems to be getting better. What with O'Mally's and Pacinco's, not forgetting Sally's!
