Undergrad level physics explanation: Quicksand is what's known as a non-Newtonian fluid, it acts like a fluid until the application of energy (i.e. stepping on it or vibrations) and then it shows behaviour not typical of fluids as we generally know them. In the case of quicksand (or custard), hitting it causes it to firm up as the energy of a footfall or whatever causes it to tighten so it supports the weight of the person. If you stand still, you are no longer applying enough pressure and the quicksand becomes more liquid-like again, causing you to sink.
