After the stress and infighting of that other thread we needed something more uplifting and light....

Another forum I use the nerds have these once a month or so, I never knew how to do it until somebody just showed me now!

Hahahahahahaha CHEESECAKE RECIPES!


Malteser & Toffee Cheesecake:
(makes 02 cheesecakes)


01 & 1/4 pints of cream
01 lb & 05 oz of cream cheese
01 sachet of gelatine
01 large box of malteasers
05 dessert spoons of sugar
04 oz of toffee sauce


Method:

08 oz of digestive biscuits & 04 oz of melted butter.
(makes 01 base)

Melt butter & add to crushed buscuits.

Line spring formed tinned with the base mixture & leave to set in the fridge.

Mix the cream, cheese, sugar & toffee sauce together (whisk it)

Dissolve the gelatine on 1/4 pint of hot water

Add the mixture to the cream cheese

Crush the malteasers & add to the mixture

Baileys Cheesecake:



100g/3½oz unsalted butter
250g/8¾oz biscuits such as Digestives, Hobnobs, Oaties. Crushed.

450g/1lb Cream cheese such as Philadelphia
1 slug of Baileys Irish cream
100ml/3½oz icing sugar
200ml/10½oz double cream
60g/2oz chocolate (dairy or plain, as you prefer)


Method:

Gently melt the butter in a saucepan. Add the crushed biscuits and mix until the butter has been absorbed.

Remove from the heat and, while still warm, press the mixture (using the back of a spoon) into the bottom of a lined 23cm/9inch springform or flan tin. Leave to set for one hour in the fridge.

While it is chilling, grate the chocolate. Set aside in the fridge if your kitchen is warm.

In a bowl, whip the cream until it forms soft peaks.

In a separate bowl, beat the cream cheese until it is soft. Beat in the icing sugar and a shot of Baileys. Fold in the whipped cream and three-quarters of the chocolate. When the mixture is smooth, smooth it evenly onto the biscuit base.

Refridgerate and allow to set for at least two hours. If you can bear to leave it overnight, so much the better.

To serve, remove from the tin and decorate. You can either sprinkle the remaining grated chocolate over the top for a simple finish, or add some individual chocolates and flakes for a more elegant and ceremonial dressing.

Some people serve individual portions with additional cream, poured over or whipped into a peak. Personally, I don't think this is necessary as this Baileys Irish cream cheesecake is already fabulously rich.

No bake Orange Cheesecake:

15 digestive biscuits
06 tbsp butter , melted
400g curd or cream cheese
grated zest 3 oranges
Save the orange segments for the decoration
200g mascarpone cheese
100g caster sugar
03 tbsp milk
184ml pot double cream

Method:

Crush the biscuits & put into a bowl and mix in the melted butter. Put the mixture into a cheesecake tin.
Use the back of a spoon to spread it evenly.

Press it down in tin to form base. Put tin into the fridge to set.

Put curd or cream cheese, orange zest, mascarpone, sugar and milk into a bowl and mix it well with wooden spoon.

Put the cream in a clean bowl and whisk until it is the consistency of thick custard. Add to the orange mixture and mix thoroughly.

Remove the cheesecake tin from the fridge. Pour the filling over the biscuit base and spread evenly. Decorate with segments of orange and return to the fridge until ready to serve (at least 4 hours or overnight).
