We use coconut milk for pancakes in our house. Egg-less sounds like defeating the purpose of pancakes though.

I'm somewhat sceptical too, but there are so many recipes - I'm going to try this Jamie Oliver one

people always put a load of weird health-food shit in vegan recipes instead of sticking to making a simple version of the 'normal' recipe

I think thats fair enough. It's only after I posted it here I noticed all the flaxseeds, which I hate.

Edited to add: If I add the sugar I normally halve the amount. Have also made them without it at all and they're still delicious.

Normally I like thin and crispy too, but those are like crispy pillows of air. They get a lovely buttery crunch on the outside and inside they're so fluffy and moist.
