Recommend me something veggie to put in a pie (1 Viewer)

I have pre-made pie dough and want to make a pie later. Suggestions?

Actually today I could probably get lots of cheap pumpkin...

fry up an onion with garlic and herbs throw in a tin of tomatoes, salt & pepper to taste. then get a cup or two of blackeyed beans throw them in a food processor for a minute. Mix into the tomato sauce and fill the pie.

Pumpkins were exactly what I was going to suggest. Otherwise, a ratatouille like mixture of courgettes, aubergines and beans in a tomato sauce is good, as is chickpea, potato and spinach, but potatoes in a pie makes it all a bit carb-tastic.

Thanks guys! (except you, Ian) I've decided I'm going ot put in a tin of butter beans, tin of tomatoes, diced sweet potato and herbs and spices. Should be nice.
