made a prawn laksa over the weekend, hadn't made or tasted one since 2004.....

it was so good, i was rendered incapcitated by its pungent aroma for a good twenty minutes!
 
it's like a malaysian fragrant curry noodle soup...mostly made with mud crab but they can be pricey so i usually opt for prawns or monkfish

i got my laksa paste recipie online...here it is!

2-6 fresh banana red chilies
4-6 fresh Spring onions, coarsely chopped
10 Macadamia nuts (mmmm)
3cm-piece fresh ginger, peeled coarsely chopped
2 stems lemon grass, pale selection only, coarsely chopped
2 tablespoon peanut oil
1 ½ tablespoon finely grated fresh turmeric
Or ½ tablespoon ground turmeric
1 tablespoon of ground Coriander Seeds
1 tablespoon Curry paste of your choice for flavour
2-4 garlic clove, coarsely chopped
1/2 cup of fish stock

buzz that all together in a blender to make your paste

then you basically just bung some of the paste, coconut milk, buckets of fresh coriander and some more fish stock into a pan with some oil, let it simmer for a wee bit and add in your fish and then after a few mins your noodles and any veggies (sugar snap peas, green beans, pepper etc)

yummy!!!

it's very good with puffy tofu too. coconut milk kills me or i'd live on this.

(i used galangal last time i made it, and i just got perfume today with a galangal note in it so i've been daydreaming about laksa. weird.)
