all the bloody pinto beans and haricot beans I have soaking in a bowl in my kitchen at home? I had a bag of them in a press since god knows when. it's about time they were eaten. anyone here ever made refried beans or anything like that? recipe ideas welcomed.
 
Easy and quick... takes about 30-40 mins all in - including preparation. I made it a couple of times... very tasty.
 
Really sorry about the delay in posting this up... my sister called.

You can substitute different vegetables but this is the basic recipe.

1 onion sliced
1 celery stick thinly sliced
1 parsnip sliced
500g mixed beans
1 can baked beans
250ml Guinness, stout or beer
250ml vegetable stock
4 tablespoons chopped herbs
150g self raising flour
75g vegetable suet
2 tablespoons coarse-grain mustard
salt and pepper

Heat the oil in a large saucepan or flameproof casserole and fry the onion, celery and parsnip for 3 minutes. Add the mixed beans, baked beans, beer, stock and 3 tablespoons of the herbs. Bring to the boil and let the mixture bubble, uncovered, for 8-10 minutes until slightly thickened.

Meanwhile mix the flour, suet, mustard, remaining herbs and a little salt and pepper in a bowl with 8-9 tablespoons cold water to make soft dough.

Evenly distribut 8 spoonfuls of the dough in the casserole and cover with a lid. Cook for a further 10 minutes until the dumplings are light and fluffy. Serve immediately

Whatever your favourite ones are. I like thyme, rosemary & basil. You can used just one or a combination. If you use dried herbs use about half as much :)

I remember they're easy to make and I think you can freeze them
it's just fry up onion, add cooked beans, bit o cumin and chilli and garlic

Superb! :D

Stalk and all in the stew... strip the stalk and roughly chop the leaves for the dumplings.

The dumplings really are nice so if you have the inclination to add them you can get vegetarian suet in that healthfood shop on South George's st. Might be possible to get it elsewhere but that's the only place I've found to date.
