Stuffed peppers? (2 Viewers)

[It Will Never Last]

Been experimenting with a few ideas for stuffed peppers recently, current favourite is a tuna/sun-dried tomatoes/mozarella/spring onion combo. Was all out of pesto or I'd have thrun some in as well.

Any other suggestions?

And as a starter, what would you serve with it (looks a bit scabby on the plate on its own)?

This may be my Xmas dinner starter.

chunkily-chopped flat mushrooms sauted in butter with garlic, rosemary, and parsley;

grated courgette;

and minced butter and red kidney beans with herb salt, ground black pepper, tomato puree, and a dash of (veggie) worcester sauce.

top with a sprinkling of red cheddar and lash on some breadcrumbs.

a humble dollop of creamy finely-mashed spud beside it.

Was watching thet Chinese news channel the other night. They poached green peppers split lenghways for a few mins. Then they made a stir fry of White and Dark fungii, lotus seeds, diced carrots and a few other bits and bobs. Seasoned with some cooking wine and lots of ginger and garlik and then added aslake of cornflour to make a jammy consistany out of the whole lot.
They stuffed the peppers with this mixture and then put the stuffed peppers into a babboo steamer for a few mins.
