got two vegan housemates in a right old state of hangover...they appeared around 2 pm, puffy and disorientated, unable to string a sentence together between the pair of them
i was planning to cook today anyway but it's taken on a new significance in light of the sorry state of the housies unable to fend for themselves

banana bread with apples, walnuts and cinnamon in the oven
brazilian tofu vatapa on the way (tofu, tomatoes, onion, cumin, chili, coriander, garlic, peanut butter, coconut milk)

i like being mammy, it makes me feel needed

vegan 2 is still in his room and hasn't moved since lunchtime.

berocca/dispirin combo followed by a nice long shit.

1 big block of tofu
2 tins of chopped tomatoes (or fresh if you can be arsed)
1 onion
lots of garlic
1/2 - 1 tin coconut milk
a couple of teaspoons of crushed cumin and coriander seeds - toast for a minute in a dry pan if you prefer
3-4 or more small red chilis
~2 tbsps crunchy peanut butter

give the tofu a damn good frying in plenty of oil, add onions and minced garlic and fry a bit more, add tomatoes, coconut milk, couple of spoons of peanut butter, chopped chilis and spices, simmer for at least half an hour
decide relative amounts to your taste...you could bulk it out with another tin of tomatoes
serve with rice
add soy sauce if you like it salty

i usually use frozen then defrosted tofu for stuff like this because it soaks up the sauciness
