It's so you can insert what you want in there, like a wild card. Generally man or woman would go in there but in this case you could add sexual either. At least that's my reading of it.

Pretty much. Its generally used to recognise the range of different trans* identities (which could include transgender, transsexual and lots of other non-binary gender expressions).
