I have a couple of books by Julia Child however i downloaded a box set of The French Chef lately and it is great. You really have to see her on TV to do her justice and get the full Julia experience.
She is technically very very good. Her recepies are always rock steady without needless flourishes and designed to work.
I think though the two Elisabeth David books I have - Italian Cooking and French Provincal Cooking are the two I would pull from a burning house.
