cooking for my wife and my folks this week. it's dietary restriction central. my wife is a mushroom hating veggie, my mum is gluten intolerant and my dad is diabetic. need to do a main and a desert that will please all. the internet has too much choice so i turn to you, all knowing thumped, for some ideas.

i'm looking at fruit salad for desert, i make that with honey, can diabetics have honey, or fruit?? just normal over the counter fruits, so long as its made very fresh that day.
 
Okay so , Im not up with what diabetics can't eat but ,how about any of these..

Veggie stirfry with rice (pretty self explanatory)

Veggie Sushi (without the rice vinegar seasoning and served with tamari , not soy sauce - gluten)

A nice curry with onion pakoras with rieta (yogurt, sliced cucumbers with ground cumin seed and maybe a touch of fresh coriander leaves)

Roast veggies with home made basil pesto - (rennet free) parmesan (if strict veggie) , pine nuts , garlic , basil (or coriander if you like) and olive oil . Just blend all ingredients together ...not the roast veggies though! .

Baked potatoes with something nice on .
served with salad etc.

Nachos with gluten free corn chips .
1 onion, diced
3 cloves chopped garlic
1 fresh red chilli or chilli powder
1 tsp paprika
Half tsp cumin
1 tsp coriander
1 tsp tamari
1 can chilli beans,kidney beans or refried beans as you like.
2 tomatoes ,diced
squeeze lemon/lime

Fry onion in oil till soft, add garlic and spices and stir for 1 min.
Add beans,tamari,tomatoes,lemon/lime juice and gently heat through.

optional toppings

Avocado,olives,sun dried toms, fresh toms diced,cucumber ,alfalfa sprouts , toasted seeds (pumpkin,sesame,sunflower)

lettuce soaked in olive oil,lime juice salt/pepper

Heat corn chips in oven until oily looking and smelling good .Place on plate and top with limey lettuce leaves , then the bean mixture. Sprinkle chosen toppings over thisand finish with squeeze of lemon or lime juice and a big dollop of hummus (check tin if bought - should be fine or make your own , just blend a tin of chick peas, olive oil, garlic, lemon juice (add tahini if you like).

This serves about 2 hungry folks so maybe double up.

Don't know about desert.
 
cheers folks! will be doing a curry of sorts i think, cheers for all the suggestions, especially THAIROCKSUPERSTAR. that's going in the binder!
