i made an amazing dinner last night, an attempt to reproduce that pork mince with chili stuff they have at roadside restaurants, bus stations, etc in thailand

there was a load of pork mince reduced to clear in the shop so i got a couple of packs and fried it up, drained it, added a load of roughly chopped small fresh chilis, a tin of coconut milk, some soy sauce and a bag of stir fry veg (also reduced to clear).
it tastes amazing...i'm having some for breakfast right now
 
I endorse the use of coconut milk. Apart from the cans that refuse to open, one of those sliced my thumb open last week and twas pumping blood like a motherfucker while being completely painless.
