Sort of a Jamie Oliver recipe.
Take a medium to big onion. Peel in then slice off a bit at the root (this is to make it stand up by itself. Then at the top of it, slice into the onion as if you're cutting in half vertically, but only go half way down. Now do the same thing again, perpendicular to the first time. What you left with is a cross (the symbol of our lord and saviour, Jesus Christ). In this gap, stick in some chopped thyme leaves, some sea salt flakes and a good knob of butter. Put your onion on a baking dish and throw in a preheated oven at 200 degrees for 35 minutes. Serve with cold left over roast lamb that your Mam cooked the previous day and a baked potato.
