Been making lots of ice cream with my frens ice cream making machine recently and I'm looking to be more adventurous with the flavours now that I've done the basics.

I don't want posh wanky ones that scare me like this

i've actually seen a lot of green tea ones around. there's one on that ice cream ireland site. but yeah, tea flavour would be savage. a summer alternative to a hot cup of tae.

the best thing would be some tea icecream AND a cup of tea. while sitting in a jacuzzi filled with tea.

Tamarind ice cream
Makes 6 servings
For this recipe you will need:

• 1 cup tamarind pods
• 1 cup water
• 1 cup brown sugar
• 2 cups heavy cream
• 1 cup whole milk
• 1 TBSP lemon juice

Preparation:

1. Clean the pods by peeling off the shells.
2. In a small saucepan boil tamarind, water and sugar for about 5 minutes.
3. Whisk the mixture vigorously to separate the tamarind pulp from the seeds.
4. Strain the mixture using a fine strainer to retain the seeds and stems of the tamarind.
5. Refrigerate until cold.
6. In a large bowl combine tamarind mixture, cream, milk and lemon juice. Pour on your ice cream maker and follow the factory instructions.
7. When the mixture is thick, pour in a plastic container, seal and freeze for 2-4 hours.

I want to make a Thai ice cream with coconut, lemongrass and lime leaf. Proper Indian chai with pepper, cinnamon and ginger would be deadly! Chocolate, coffee and cinnamon would be a nice combo, but it might take a while to nail the levels.

Nutmeg ice cream with chunks of gingerbread in it! Yum. Also mango ice cream. Hell mango anything is good.

ah, I thought ya meant fresh coriander. Sure the leaves would go black and slimy when frozen.
