I made this for lunch yesterday after buying a bagel version of it in a hipstery cafe last week. It was 10/10 both times.
Two big slices of crusty bread warmed (not toasted) in the oven
Loads of American mustard on both slices
Slices of dry fried normal or smoked tofu
Big chunks of gherkins
Back into the over to warm it up a bit before eating.
