Butter bean burgers
i've made these a couple of times recently and they rock.

INGREDIENTS:

  • 1 (15 ounce) can butter beans, drained
  • 1 small onion, chopped
  • 1 tablespoon finely chopped jalapeno pepper
  • 6 saltine crackers, crushed
  • 1 egg, beaten
  • 1/2 cup shredded Cheddar cheese
  • 1/4 teaspoon garlic powder
  • salt and pepper to taste
  • 1/4 cup vegetable oil

DIRECTIONS:

  1. In a medium bowl, mash butter beans. Mix in onion, jalapeno pepper, crushed crackers, egg, cheese, garlic powder, salt, and pepper. Divide into 4 equal parts, and shape into patties.
  2. Heat oil in a large skillet over medium-high heat; use more or less oil to reach 1/4 inch in depth. Fry patties until golden, about 5 minutes on each side.
 
Made this last night. Don't think I'll bother with the aubergine/spud cakes though. Just realised that I forgot to put the cumin in them, duh.


Chicken Tagine for Two
2 breasts
2 tbsp olive oil
2 crushed cloves garlic
1 onion
1 tsp ginger
1tbsp coriander seeds, crushed
1.5 tsp cumin seeds, crushed
05. tsp cinnamon
salt and pepper
1 tbsp tomato paste
1 tin tomatoes
1 tbsp honey

Heat oil, garlic, onions, spices. Keep on low heat, stirring for 10 mins. Add tomatoes, paste, honey, cook til sauce is thick - 20 mins. Add chicken, cover and cook for 20 mins.

Serve with couscous.

Couscous with lemon and mint (or Coriander) for 2
250g couscous
2 tbsp olive oil
juice of 1 lemon
250ml chicken stock
2 tbsp chopped mint or coriander
Place Couscous in bowl, add oil and lemon juice, mix well
Pour in boiling stock and season. Cover and allow to sit in a warm place until all the water has been absorbed (5-10 mins). Stir in herbs and serve.
Note: looks tidy if you place it in a slightly wet tea cup, press in a bit and turn onto plate.

Aubergine and potato cakes
500g aubergines sliced thickly.
4 garlic cloves unpeeled
425g potatoes scrubbed and left whole
100g grated onion
4 tsp finely chopped corriander leaves
3/4 tsp salt
1/2 tsp ground cumin
pinch of paprika
1 eggwhite

Steam garlic and aubergine for 8 mins. Peel and mash garlic with aubergines
Steam potatoes until cooked yet firm, grate and mix with aubergines, grated onion, coriander, salt, cumin and paprika. Beat egg white and fold into mixture. Leave for 5 mins.
Oil your hands and roll into 3cm rounds. Fry cakes til golden.

Last night I made tomato and fennel stew-

Chopped a head of fennel, a leek, a couple of cloves of garlic and a chilli. Fried em up with fennel seeds, mustard seeds, salt pepper and tomato puree

Chucked in lots of veg stock, canned tomatoes, largely/roughly chopped peppers, red onion, mushrooms and a can each of white and kidney beans.

Made sexy mash

Ate it watching Corrie

Felt too stuffed to move for about 2 hours.
