Hives is almost right.

Young bulls that are not being kept for breeding purposes are generally castrated at a few days old, becoming bullocks, and then destined to become beef, but it is not uncommon for heifers (virgin females), infertile females and older cows (females who have given birth to calves) to also end up on the table. The tastiest meat actually comes from older cows in my experience, especially if they've been grassfed for their lifetime.

Bulls (uncastrated) don't actually produce good beef - too tough and not very nice.

In my neighbours herd, only the cows are eaten here. All his bullocks get shipped to Italy when they're 1 year old. for veal like.
