i'm making stock out of giblets for the first time, for the adventure of it.
i've never even seen giblets before (long years wasted as a veggie)
they're quite sad...the little heart and little liver

the christmas gravy should be damn tasty though

is there anything you can do with the boiled giblets or are they just too gross to eat? a stock recipe i saw said they make a good christmas lunch for a deserving dog or cat...

Included in the giblets will be some bits that are useful and some that are just for the dogs. Look up some Paté recipes, they'll use the liver and maybe some other bits. I've never made it but I believe it's easier than people think. The neck and heart are probably only good for the dogs.
