Easy to Freeze Dinners (1 Viewer)

Looking to help out a relative who's going through a tough time at the minute.
Was going to cook something that she can stick in the freezer & use whenever suits.

Needs to be kid friendly & preferably something that's an all in one dinner that just needs to be reheated so she doesn't need to make fresh rice or pasta.

A neighbour already dropped round a Shepherd's Pie (which is a pain cos I actually have some in my freezer too).

Any recipe ideas?
 
Lasagne's probably a safe bet.
Never actually made it due to the fact that her indoors hates bechamel sauce but should be able to find a decent recipe online easily enough.

Stew is a good plan too although it might not be as popular with the kids.


If anyone has any specific recipes that they've tried out I'd love to hear them (including Stew, Lasagne, pies, etc.).
I like Morman Nailer's idea of a baked pasta dish (something other than lasagne as someone else will probably drop one in).

Would love a good coddle recipe, Shneaky (if that is your real, new, name).
Anyone got an old-scoil recipe for coddle?
 
Shneaky's can't fail Coddle recipe....

20 Superquinn sausages
1kilo bacon pieces
Carrots(sliced in circles)
4 onions(chopped)
Spuds
Bisto(about 4 spoons)
Black pepper(no need for salt)

Lash 4 chopped spuds and everything else in a v. large pot,and cook for 1 hour,stirring occaisionally.If the bacon used is fatty you may need to scoop some of the fat off the top.
Add rest of peeled and halved spuds and continue cooking till spuds are done(but still whole).

Commence to NOM.

Better still,cook the night before you're gonna eat it and leave in pot till dinnertime next day.Then commence with super NOM NOM.Or freeze etc.

Serve with brown sauce and bread and butter.


This recipe has fed at least 3 generations of 6Packs.Can't get much moe old scoil than that.

P.s Aldi do great bacon pieces...cheap.

this is remarkably similar to me ma's / da's.
only difference is either tinned peeled tomatoes / puree or something instead of bisto.
only thing my da can make successfully apart from burned toast.
yeah, the longer you leave it in the pot, the better it tastes!
coddle is pure gifty balls!
 
Coddle went down a treat.
Used some Theodora Fitzgibbon recipe from the 50's but put in streaky rashers instead of smoked ham.
Also made a loaf of soda bread.

Didn't need to freeze it in the end.
The kids all had seconds.
